For the kids: Pork & Cheese Quesadillas

You could cut them into wedges for the kids.

These are super easy to make and the kids will actually eat them! You can use leftover chicken or pork, making it an economical meal. I used leftover pork chops from last night.

What you need (to serve 2-3 people):

2-3 cooked pork chops (or chicken breasts), chopped into small pieces

1-2 cups of cheddar cheese, grated

A package of flour tortillas

A frying pan

Olive oil

Heat the frying pan over medium high heat and add 2 tablespoons of olive oil. When the pan is hot, place one tortilla in the pan. Turn the heat down to medium. Quickly add the cheese and pieces of pork, and then place another tortilla on top as a “lid.” Press it down with a lifter or with the bottom of another pan. The cheese needs to “glue” it together. Cook for 3-4 minutes, until the cheese starts to melt and you see the bottom tortilla beginning to crisp.

Press the top down again, then flip it over (using a lifter). Cook for another 2-3 minutes. Remove from the frying pan and cut into wedges. Happy Eating!
